For this hop, I'm sharing two recipes! My hubby is diabetic now and trying to watch what he eats. Usually it's just what he's eating.. LOL
We took part in a Dining with Diabetes class, and these two recipes were so easy to make, and they are delicious.
The first one is a quick and easy Pudding!! My granddaughter can whip this up in no time and we all love it!

2 cups skim milk, tub of low-fat whipped topping, favorite flavor of sugar-free instant pudding. That's it!!

For the holidays, we put the pudding into the Phyllo Dough premade cups. Drizzled some Chocolate and/or Caramel syrup over them. Festive and still less fat!
The next one is a great and easy fried Chicken recipe without the fat and mess of frying but great taste!!

Boneless/skinless chicken breasts cut into strips. While oven is preheating to 425. Marinate chicken in low-fat yogurt. Mix 2T flour, 1t Paprika, 1t Cayenne powder, 4T Grated Parmesan Cheese, 3/4 cup bread crumbs. Coat chicken with crumb mixture pressing into the chicken. Place on cookie sheet, sprayed with non-stick spray, and spray over chicken so it crisps up. Bake for 15-20 min. turning mid-way and spraying again. It's delicious!!!

I put these on 81/2 by 11 so I could put them in a 3 ring binder with page protectors. Easy to add to it, and when my granddaughter is on her own, she'll have some family favorites to take with her. She loves to cook!!

  6. The pudding sounds quick and easy just like i like a recipe and it is diabetic :) love that ...I do not however run for chocolate unless it is white chocolate ;) why my hubby married me he gets all the milk and dark chocolate :) laffff thanks for sharing your great recipes with me ..
